Preheat oven to 180 degrees
Cream butter and sugar with the vanilla essence, until light and fluffy
Add the lightly beaten eggs, slowly, and then the zest
Sift flour and baking powder together, add to the creamed mixture, alternately with the milk, until smooth consistency achieved.
Pour half the mixture into a greased and lined deep 20cm tin, place stoned plums on top and pour the rest of the mix on top.
Bake for 35-40 minutes or until the centre springs back and a skewer comes out clean
After 15 minutes, allow to cool on a cake rack, dust with icing sugar if desired, just before serving with whipped cream or yoghurt
